A friend sent me this article about how beans are great for cardiovascular health which promoted this post.
Beans are great. I'm eating them a lot. Like this week, my wife made enough chilli for 2 days.
Sometimes I put beans in wraps along with rice, lettuce, roasted pepper, onions... I cut a piece of sweet potato in small chunks so it boils faster, boil it (with the skin) till it's soft, maybe 5-10 min. put that in the wrap. Surprisingly, it doesn't take much of each ingredient to fill the wrap, so these ingredients go into a plastic container to make another wrap later.
Of course there’s no right or wrong way to do it. Food is like art right? Here are some good lookin recipes in a blog called “RABBIT FOOD”

Over 30 years back
before I stopped eating meat, a staple in our house was (pronounced) "gra" (Macedonian for ‘bean soup’) which my mother made from scratch.
Fuck, when I think of it, the work she did! She grew the beans in the garden, picked them, put them in a big canvas tarp, left them to dry in the hot sun on the driveway for days, then she'd smash them with a club or stick, which would separate the beans from the shells, then somehow, I dunno how, but she's separate the shells and the beans, likely by hand. The dried beans would last over the winter. She'd boil them up in this soup to make "gra". At the table we'd have leaves we'd crush up by hand to put in the soup. The leaves were "mint" leaves which she also grew in the garden.
Tomatoes, she would crush up and put the tomato sauce in mason jars. We had a creepy cold room in the farm house where all these preserves would stay, shelves and shelves of things.I remember she boiled the jars, somehow this made a seal but I don't remember 100% how she did it. And she did it 99% on her own. She was always in the garden!
Jan 14 would have been her birthday. Jan 14 is Orthodox New year which she was born on and she died Dec 31 1998, New years eve by the "new" calendar.

I almost forgot about Bill Pearl, a bodybuilding Legend who was winning Mr Universe competitions on a vegetarian diet (not vegan but still. I believe he still ate eggs but no animals) in the 60s well before Schwarzenegger and well before internet. Now it’s so much easier to look things up. He just passed Sept. 14, 2022 at age 91.
